Mini Chocolate Donuts

My first attempt at mini donuts was less than encouraging.  I followed the recipe on the packaging for my Wilton mini donut pan.  It made lovely little donuts, which tasted like cardboard. Fail.


Sure, they're lovely, but they tasted like cardboard. 
Lucky for me kids will eat anything that has chocolate frosting on it.

For my next trial I used a boxed gingerbread cake mix.  I followed the directions on the package, but reduced water to 1/2 cup. Those turned out pretty well - but since my target audience is 14 year-olds I wasn't sold on the gingerbread flavor.

I happened to have a German Chocolate cake mix on hand, so I gave that a whirl. Bingo!  The coconut pecan frosting was a bit too messy and slippery to stay on, but a little cream cheese frosting and some sprinkles and we have a winner. I don't see why this method won't work with pretty much any flavor of cake mix.

The best way to fill these is to put the batter in a ziploc bag and snip off a corner - no muss, no fuss.

Use a regular cake mix, but reduce water to 1/2 cup.
