Week 2

I decided to get a jump on the week because I am counting on the 'early bird' bonus points.

My first recipe was found HERE. It was Parmesan-Crusted Tilapia. It needs a few little tweaks, but overall... the whole family loved it.

My favorite part was that I had all of the simple ingredients in my home!



And because I am always looking for bonus points I posted this recipe from HERE

I am still on the hunt for the perfect Thai Curry, and this was pretty close. I put in carrots and potatoes instead of cauliflower. Added more coconut milk and broth to give us some more juices. I also added a bit of sugar because the coconut was 'lite' and it needed some sweetness added.


It wasn't bad, but it will be better tomorrow after all of the flavors sink in over night.
